Chicken Pot Pie Made Simple

After my first time making a chicken pot pie took around two hours,  I decided that I was looking for something a little less complicated.  The first chicken pot pie was without a doubt delicious, but this time I needed a simpler solution.
I followed my roommates suggestion – mix together chicken, some vegetables, and some gravy.  Put it in a pie crust and bake it.  Out it comes and it is oh so good!

This is what I did:

Bake chicken (frozen or thawed) for ~30 minutes at 350 degrees until cooked all the way through.  If you like, season chicken as preferred.

Once the chicken is cooled, using a fork shred the chicken into pieces.



Mix your favorite vegetables in – frozen peas, frozen carrots, diced celery.  This time I had extra gravy in the freezer leftover from Thanksgiving and so mixed the gravy in, enough gravy to moisten all the veges and chicken.  Add a little salt and pepper to taste.

Roll out favorite pie dough to pie a pie dish.

Fill the pie crust with the mixings.

Roll out the rest of the dough and cover the pie.  Fold the edges in to seal the top and bottom.  Poke a few holes with a fork in the dough to allow the pie to steam in the oven.  I used melted butter to spread on the crust to brown and crisp the top.  Egg whites, milk, etc. can also be used.

Bake pie for 40-60 minutes at 350 degrees.  Until crust is cooked through.  Cool and enjoy!

Chicken Pot Pie

  • 4-5 medium sized chicken breasts
  • 1-2 cups frozen peas
  • 1-2 cups frozen carrots
  • 3-4 stalks of celery, diced
  • Gravy
  • Pie crust for top and bottom
  • 3 tablespoons of melted butter
  • Salt and pepper to taste

Season chicken breasts with a little salt and pepper or your favorite seasonings.  Bake chicken breasts at 350 degrees for 30-40 minutes until the middle is no longer pink.   Let cool and shred chicken into small pieces.  In a mixing bowl, mix chicken, peas, carrots, and celery.  Add gravy.  Roll out pie dough and place the bottom crust in the pie pan.  Fill the crust with the mixings.  Put top dough on the pie and seal the edges.  Poke ventilation holes in the top crust.  Brush melted butter over the top.  Bake for 40-60 minutes at 350 degrees depending on crust, size of pot pie, etc.

Take out, let cool, and enjoy!

This time I had extra pie dough and extra mixings/fillings.  So I decided to get a little fancier with my pie crust.  Instead of a ‘full’ top pie crust, I made my first ever lattice pie crust top.  It wasn’t the prettiest but I am working on it!
