Old World Raspberry Bars

This is one of my favorite dessert bars that my mom always made each year for Christmas.  I do not remember where she found the recipe, but it is splendid indeed!

Old World Raspberry Bars
crumb mixture:
2 1/4 cup Flour
1 cup chopped pecans
1 cup sugar
1 cup butter
1 egg

1 10 oz.  jar of raspberry preserves,  You can use any kind of jam that you like.
(I couldn’t remember the amount of the preserves so I guessed –
but if it looks like it is too much, take some out.  And if it isn’t enough …add some more.)


Preheat the oven to 350 degrees. Combine all crumb mixture ingredients together in one bowl.  Beat at low speed until mixture is crumbly.  Reserve 1 1/2 cups of mixture  – set aside.
Press remaining crumb mixture into bottom of 8 inch square pan.  Spread jam on top – then crumble reserved crumb mixture on top of jam.
Bake 40 – 50 minutes or until lightly browned.  Cool completely and then cut into bars.   Makes about 2 dozen bars.
