I love, love, loooooove shrimp and this is one of my favorites!

Shrimp Scampi, Barbequed (right from Grandma’s recipe)

  • 1/4 cup olive oil
  • 1/4 lemon juice
  • 1 tablespoon minced garlic
  • Salt and course black pepper to taste
  • 1 to 1 1/2 lbs. raw shrimp (16-20 per lb.)
  • Grated Parmesan cheese
  • Parsley (optional)
  • Crushed red pepper (optional)

Remove shells from shrimp and devein.  Mix oil, lemon juice, garlic, salt, and pepper and blend well.  Add red pepper if preferred.  Marinate shrimp in minture, tossing often for 30-60 minutes – no longer or it will toughen shrimp.  Grill for 2-3 minutes on each side.  Remove to serving plate and sprinkle with copped parley and shredded paresan.

We have a Christmas Eve tradition of goodies served around the kitchen table or counter.  Stared with cheese fondue – over the year the stuffed mushrooms, bacon wrapped water chestnuts, “Patti’s” cheese ball and boiled shrimp were added.  Last year our son (my father), Ray fixed the shrimp this way instead of boiling and it was a huge hit – will keep it in the mix!!! With the two of us (my grandparents), Ray, his wife Barb (my mom), and the 4 grandkids, large batches are required – any leftovers are snacked on the next day as Christmas Dinner is being prepared.
