Chocolate Cheesecake

Cheesecake plus chocolate = Yes, please!

Another recipe from my wonderful Mother πŸ˜€

Fudge Truffle Cheesecake

3 (8 ounce) packages cream cheese – softened
1 (14 ounce) can sweetened condensed milk
2 cups (12 ounces) semi- sweet chocolate chips – melted. (has to be good ones)
4 eggs
2 teaspoons vanilla extract

Crust – can use chocolate graham crackers or chocolate cookies – crush them ~1 1/2 cups.
Add about 3 tablespoons melted butter. Mix together and put in spring form pan.

Mix the softened cream cheese with the condensed milk, melt the choc chips in the
microwave (be very careful when you are melting the chocolate – try 20 seconds – stir
and if not all melted – try 20 more seconds. The choc can easily burn – so watch it!)


Add to the cream cheese mixture – then add eggs one at a time (break in separate bowl
first) then add the vanilla.


Pour into spring form pan over the crust. Bake at 350 for only 55 minutes – not any
more or less! Also take a cake pan and put an inch of water in it and set it in oven on the
bottom rack (below the cheese cake)


*After the cheesecake is at room temperature – you can take a long piece of dental floss
(make sure it is plain – not mint) and you can use this to cut the cake.
*This cheesecake tastes best with some whipped cream.

  1. So how did it taste? Did you watch the temp of the oven – so it didn’t burn? mom.

    • I didn’t get to try it…haha because I gave up baked goods for Lent! But everyone told me it was delicious! Though, we did burn it a little! I still can’t get it quite right without you!

      • I think your oven gets too hot – so watch your temp. I have found if you let the cheesecake cool in the fridge for a little bit and then use the dental floss to cut it – it seems to work better. I happened on this by mistake – I didn’t have time to cut it while it was a bit warm so I had put it in the fridge and then used the dental floss to cut it the next day. It worked great. It wasn’t as messy.
