Versatile Crepe Recipe

Thanks to my supervisor, a fellow co-worker, and of course, I now have a keeper crepe recipe.

It requires only ingredients that you are most likely to already have in your kitchen, it is easy, andddd it is very versatile.  It can be used for savory crepes or for sweet/more breakfast/dessert type crepes.


So without further ado, here is the recipe from, a little modified.


  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk (or 1 cup milk)
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted


  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.


  • I double the milk to 1 cup to extend the recipe a little further; if you don’t the batter is pretty thick
  • To make the crepes a little sweet for dessert crepes – add a touch of vanilla and sugar
  • For more savory crepes – add a touch of pepper and some herbs
  • This recipe makes for about 8-12 crepes; double the recipe and these crepes keep well in the fridge and freezer!
  • For dessert/breakfast crepes, things like I like are: nutella, raspberries, strawberries, bananas, Greek yogurt, honey/agave, cream cheese, peanut butter, almonds, etc.
  • For savory crepes, you could use chicken/turkey, lettuce, tomatoes, a favorite  sauce, etc.

Here I have raspberries, strawberries, sliced almonds, Greek honey yogurt, nutella, and agave!
