Boston Cream Pie

So for my father’s birthday.  I made his favorite cake/pie, I am not sure why it is called a pie, but anyways, a Boston Cream Pie!
I pre-made the yellow cake (just one day before, and kept it in the fridge) to make the assembly much easier.
Here are the instructions for the yellow cake.

From my mother’s ~50 years old Betty Crocker cookbook, I made the custard for the pie.

So to continue along with making the pie (after making the yellow cake the day before), I made the Boston Cream Pie Filling.

Boston Cream Pie Filling

  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 1/2 cups milk
  • 2 egg yolks, slightly beaten
  • 2 teaspoons vanilla

  • Mix sugar, cornstarch, and salt in saucepan.
  • Stir in milk, and cook over medium heat, stirring constantly, until mixture thickens and boils.
  • Boil and stir 1 minute.
  • Stir at least half of the hot mixture gradually into egg yolks, and blend back into hot mixture in saucepan.
  • Boil and stir 1 minute.
  • Remove from heat; stir in vanilla.
  • Cool to room temperature.

Chocolate Glaze

-1/2 pint of whipping cream

~1 cup of chocolate chips

Heat whipping cream in small saucepan until boiling.  Remove from heat and pour over chocolate chips, stirring and melting all the chips together with the cream. Cooling down the ganache will thicken it and make it more like a glaze when pouring over the cake.

Assembling the Boston Cream Pie

Spread the cream filling/custard on one layer of yellow cake.  Place the other circle cake on the top.  On top of this, pour the cooled ganache over the cake and let it drip down the sides of the cake.  I put this back in the fridge then for the ganache to harden on the cake.

Side note – This cake did not turn out so pretty, buuuuut it was absolutely DELICIOUS! Seriously, so good! Also, I would have cut each layer of cake in half, so that each cake would have made one whole cake – the yellow cake was a little thick so slicing them in half would have been a little better!

See you in the kitchen,
