Corn Meal Waffles

While Up-North (I am from Minnesooooota, haha) at the cabins, my wonderful mother made us these delicious Corn Meal Waffles, from a recipe given to her years ago by my also wonderful Aunt Brigid!

…and I am sure thankful!

Because you know what…yeap…you guessed it! They are DELICIOUS!

Corn Meal Waffles

1 cup flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon soda
1 teaspoon sugar
1 cup corn meal
2 eggs
2 cups buttermilk (you can substitute 1 cup plain yogurt and 1 cup milk)
¼ cup oil (you can use butter instead)

Mix together wet ingredients, mix together dry ingredients, then mix together. You can make
waffles or pancakes.

Side note – I like to make double batches and keep the waffles in the freezer.  They are easy to pop in the toaster and have quick waffles for breakfast anytime! You can also change up the flavors of the yogurt as you like!
