Basic Muffin Recipe

I am very much a believer of the ‘breakfast is the most important meal of the day’ mantra!

So the other day I needed to make some snacks for an early morning meeting – what better way to encourage people to come than through muffins and scones!

Blueberry and Walnut Muffins

Ingredients:

  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup brown sugar
  • 3/4 cup granulated sugar
  • 3/4 cup milk
  • 1 egg
  • 1/4 cup oil
  • 1/4 cup fruit, nuts, etc.

Directions:

  1. Combine flour, baking powder, sugar, and salt in large bowl
  2. In a different bowl combine milk, egg, and oil
  3. Combine together
  4. Grease pan/put muffin tins in muffin pan, and fill 1/2 – 3/4 full with batter
  5. Make and sprinkle on topping
  6. Bake 15-20 minutes or until golden in 400 degrees oven

Topping:

  • Mix together 2 tablespoons sugar, 1 tablespoon flour, 1/2 teaspoon cinnamon, and 1 tablespoon butter.
