Pumpkin Cream Cheese Muffins

Tis the season for EVERYTHING pumpkin šŸ˜€

I am doing my part by contributing to the massive number of pumpkins that are consumed during this season in this country! I typically don’t enjoy pumpkin cookies, pumpkin pies, etc. however these muffins are DELICOUS! Wo!
So enjoy! I followed this recipe to almost a T from allrecipes.com, except for substituting sliced almonds for the pecans (solely because I didn’t have any on hand, but the almonds were just fine).

Pumpkin Cream Cheese Muffins

3 tablespoons chopped pecans
2 1/2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 eggs
1 1/3 cups canned pumpkin
1/3 cup olive oil
2 teaspoons vanilla extract
