Broccoli Beef Stir-Fry

And so I begin, trying to make a meal plan each week to cook for myself and the hubby! I will also then try to post about each meal to keep track of all of the goodies!

This is a mash-up of multiple recipes that I found and it turned out pretty tasty.

Broccoli Beef Stir-Fry

  • Diced beef – 4 cuts of round eye of round steak (or whatever beef cuts you have in the kitchen)
  • 1/3 cup reduced sodium soy sauce
  • 2 tablespoons brown sugar
  • Diced garlic (the more the merrier)
  • Chopped ginger (powdered could be substituted)

Mix above ingredients together and let the beef marinate in the fridge while preparing the rest of the dish.

  • Spaghetti noodles
  • 1 bag frozen broccoli

Boil spaghetti and broccoli; drain; and set aside.

  • Oil
  • Diced garlic
  • Chopped ginger

Cook the marinated beef on the stovetop.  Mix together 1 part cornstarch with 1 part water.  I didn’t want the sauce to be too thick so I used small quantities.  Add this to the beef and let the sauce thicken.  Remove from pan.

Add the noodles and the broccoli to the pan.  Add a little soy sauce, garlic, and oil.  Stir-fry.  Add the beef back to the pan and mix in with everything.  Flavor to taste and enjoy with sesame seeds on top!

Recommended changes:

  • Add water chestnuts
  • Add peanuts
  • Use sesame oil to cook beef in
