Cilantro Chicken Fajitas

I pretty much followed this recipe for a great and tasty fajita and served it with rice. Delicious!

Cilantro Lime Fajitas


For the Fajitas:

  • ~3 chicken breasts, sliced lengthwise
  • 1 onion
  • 2 bell peppers (I used one red and one green)

For the marinade:

  • Juice from 3 limes
  • Bunch of chopped cilantro
  • 3 tablespoon olive oil
  • 1/3 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon chili powder (I didn’t have any this time)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon onion powder

Mix together marinade ingredients and then mix in chicken.  Let rest for 1-2 hours.  Cook chicken in skillet over medium/high heat until cooked all the way through. Place chicken to the side, cook onion and bell peppers in juice.  Serve in tortillas or like I did serve with rice!
